Welcome

Hello everyone, welcome to my blog where I will share my experience being a wife, mom, and student. My name is Clevene Clarke and I am married to the love of my life Jermaine Clarke. We have two beautiful girls who keep us on our knees and feet each day. We love their excitement to learn and they quickly kick us away when we try to help.  Building a home with my husband for the last 6 years has not always been easy, but we wake up each day and keep trying to improve. We wish to announce, that we have not earned our degree in parenting lol.   In this vlog, I will share my lifestyle, frugal living, meal plans, meal preps, Jamaican recipes and so much more. Let me hear it for all the mamas who also are penny pinchers and dime clinchers.  You can follow me each week as I post and feel free to share your insights and feelings in the comments. I will be posting twice per week so stay tuned to the wild ride into my crazy.

Total Time      Prep Time     Cook Time
2 hr 30 min       2 hr                 30 minutes

Ingredients
 16 servings

1 cup whole milk (240 ml)
1 cup water (240 ml)
¼ cup unsalted butter (60 ml)
¼ cup packed brown sugar (50 g)
2 ½ teaspoon active dry yeast
4 cups all-purpose flour (500 g) plus more for dusting
2 teaspoon salt ( you can add 1 ½  teaspoon if you prefer less salt)
2 large eggs (optional)
Oil for greasing

Topping
 1 cup milk
¼ cup brown sugar/ granulated
2 tbsp cinnamon powder
2 tbsp flour

  • Preparation

  • 1. Measure milk, and water in a liquid measuring cup. Add the ¼ cup of butter to a saucepan to melt over low heat. Add milk, water, and sugar. Let the liquid cool down and use a finger to test, the liquid should be warm to the touch and not hot. Keep testing until the mixture becomes warm but not hot.

  • 2. Sprinkle the yeast evenly over the wet ingredients, stir to combine, and let stand for 5 minutes, until foamy. The yeast must become foamy to work.

  • In a large bowl, combine the 4 cups of flour and salt.

  • 3.  (Optional) Beat 1 egg, then add to the bloomed yeast mixture. If you omit the egg just proceed to step 4.

  • 4 . Pour the wet ingredients into the flour and stir with your hands until the mixture comes together and forms a dough. Turn the dough onto a lightly floured surface and knead for 5-10 minutes, or until the dough becomes smooth. Add more flour as needed to keep the dough from sticking. To test if it’s done, press a finger into the dough to see if it bounces back.

  • 5. Lightly grease a large bowl with oil. Add the dough into the greased bowl, cover with plastic wrap, and let rest for 1 hour, or until doubled in size.

  • 6. Punch down the dough, then turn out onto a floured surface. Knead for 2 more minutes,  until the dough is smooth.

  • 7. Divide the dough into 2 equal parts. Divide each part into 8 small balls. Don’t worry if there is less or more but you should have at least 10.

  • 8. Knead the balls, to make them round with a smooth top.

  • 9. Place the rolls in a parchment paper-lined baking pan. Cover with plastic wrap and let rise for 30 minutes. If you do not have grease paper, you can grease the insides of a crock pot or baking pan.

  • 10. Preheat the oven to 375˚F (190˚C).

  • Topping Preparation

  • 1. Combine sugar, cinnamon powder, and milk in a small pot or pan. Add 2-3 tbsp of flour to the mixture and stir over low heat until thickened to desired consistency. Like a cream.

  • 2. Pour the mixture over the rolls after they have risen in the baking pan. Cover all the balls evenly.

  • Bake for 25-30 minutes, or until the rolls have doubled in size.

  • Enjoy!

*Ps. You can opt out of the cinnamon-glazed topping and add salt or honey to make regular rolls.
